Beetroot Bruschetta

This requires no cooking just toasting so I’m almost certain anyone is capable of making this beautiful and refreshing dish

Beetroot Bruschetta

A really pretty dish great with summer salads

Ingredients

  • 2 Beetroots (cooked)
  • 4 Slices of Bread
  • 3tbsp Cream Cheese
  • Feta
  • Mint Leaves

Directions

  1. Pop bread in a toaster or lightly toast under the grill
  2. Great Beetroot and mix with cream cheese
  3. Spoon mixture onto toasted bread, crumble feta on top and scatter with mint leaves
