Epic Tuna Nicoise

This salad is the basis of a Tuna Nicoise but has an added element of whatever the hell you like put into it! Any old veg you got lying around, capers in the cupboard which you’ve always thought of using but never got round to, even some left overs which you’re not sure what to do with…. this is the salad for you!

Epic Tuna Nicoise

This is a Tuna Nicoise with a bit of everything, great way to use up any of that veg that's about to be thrown away

Ingredients

  • 2 Cos Lettuce
  • Whatever Veg you’ve got lying around (peppers, onions, carrots etc)
  • Dry Mixed Herbs
  • 3 cloves garlic sliced
  • 2 Tinned Tuna drained (large)
  • 4 Eggs boiled
  • 2tbsp Olives
  • 150g Baby Potatoes boiled and chopped to bite size
  • 1/2 Cucumber sliced
  • 2tbsp Capers
  • 2 Limes
  • O Oil

Directions

  1. Heat oven 200DC
  2. Roughly chop veg, put in roasting tray, add garlic, drizzle with oil, scatter mixed herbs over and roast until they’re soft and beginning to brown
  3. Once Veg is cooked, combine all the ingredients and mix well ensuring everything is coated in flavour!
