Pesto Courgetti

Pesto Courgetti

You can always buy your own pesto but if you're feeling creative it's dead easy to make your own!


    Pesto Courgetti
  • 3 Courgettes (Spiralized)
  • 1 Red Onion (Thinly Sliced)
  • 2 Handfuls of Tomatoes
  • 1 Pot Pesto
  • 1tbsp Cream Cheese (optional)
  • Homemade Pesto
  • 2 Bunch of Basil
  • 2tbsp Parmesan
  • 1 handful toasted Pinenuts
  • 2 Garlic Cloves
  • 1 Lemon
  • Olive Oil


    Pesto Courgetti:
  1. Cut tomatoes in half and place on a baking tray
  2. Season tomatoes with salt, dried herbs (thyme, oregano, whatever you like) and drizzle with olive oil
  3. Put tomatoes under the grill until they start to bubble, then remove and set aside
  4. Place the spiralized courgette into a bowl and pour hot water over. Allow the courgette to soak in the hot water for a couple of minutes
  5. Meanwhile, heat the pesto (if you want it creamier add 1tbsp cream cheese to pesto)
  6. Drain the courgette and combine your red onion, pesto and grilled tomatoes
  7. Homemade Pesto:
  8. Blitz all of the ingredients together slowly adding the oil to the mixture until it becomes saucy You can add anything you like to this recipe, occasionally I would add some grilled chicken pieces or scatter over some more toasted pine nuts
