Refreshing, tasty and sweet. The left over juices are great for dipping bread in too!
A lot of people use this as a dip for tortilla chips but Tomato Salsa is so tasty on grilled bread or if you make a lot of it, it can be served as a side salad!
- 3 Handfuls of Tomatoes diced (any kind)
- 1 Garlic Clove crushed
- 1/2 Red Onion diced
- 1 small bunch of Parsley
- 2 Lemons juiced
- 3tbsp O Oil
- 1tbsp Red Wine Vinegar
- 1tsp Sugar
- 1 Spring Onion
- 1 Chilli (optional)
- Dice the tomatoes and discard the seeds.
- Put the tomatoes in a sieve and sprinkle with a little salt, leave for 10mins
- Mix all ingredients together, add chilli for a little spice.
