Chicken, Fennel and Potato Tray Bake

Ingredients

  • 8 Chicken Thighs`
  • 750g Potatoes
  • 3 Garlic Cloves
  • 2 Fennel Bulbs
  • Balsamic Vinegar splash
  • O Oil Drizzle

Directions

  1. Heat oven 220℃
  2. 2.Cut potatoes into 3/4 slices and place in baking tray.
  3. Scatter over garlic
  4. Slice fennel finely and scatter
  5. Season
  6. Splash over some Balsamic Vinegar and a glug of olive oil
  7. Rub chicken with salt and pepper and arrange on top
  8. Cook for 45mins-1hr (until chicken juices run clear)
