Chicken, Pancetta and Gorgonzola Salad

This salad is delicious, light and healthy. Loads of flavour and colour!

Chicken, Pancetta and Gorgonzola Salad

  • 3 Chicken Breasts sliced
  • Marinade for Chicken:
  • 1 Lemon, zest and juice
  • 0.5 Garlic
  • 1tsp Cayenne Pepper
  • Oregano just a sprinkle
  • 5tbsp O Oil
  • Salad:
  • 50g Pancetta
  • 4 Spring Onions
  • 3tbsp Fresh Parsley
  • 3tbsp Fresh Tarragon
  • Salad Leaves
  • Gorgonzola handful broken up
  • Dressing:
  • 1tbsp Mayo
  • 1tbsp Yoghurt
  • Cayenne Pepper sprinkle
  • 4 Anchovies
  • 1 Lemon juiced
  • 3tbsp O Oil
  • Water add as much or as little for the consistency you would like


  1. Blitz Marinade ingredients and marinade sliced chicken pieces for at least 30mins
  2. Griddle or lightly fry chicken
  3. Fry Pancetta and drain on paper towel once cooked
  4. Blitz Dressing ingredients
  5. Put salad ingredients together and pour over a bit of dressing so that all the salad pieces are glistening
  6. Toss the salad well
  7. Assemble Salad on a plate, place chicken and pancetta over the top and any left over dressing leave aside for guests to  add more if they would like

Try serving this with a Caprese Salad on the side!
