Greek Chicken Souvlaki with Coriander

Whilst sailing round Corfu and other parts of Greece this was on every menu and ordered every time! It’s light, refreshing, delicious and satisfactory and is great served with a side of tzatziki!

Greek Chicken Souvlaki with Coriander

  • 5 Chicken Breasts diced into bitesize pieces
  • 8 Pitta Breads
  • Salad Pieces
  • Marinade for Chicken:
  • Fresh Mint small bunch
  • 3 Garlic cloves
  • 1 Red Chilli
  • 1 Lemon zest and juice
  • 4tbsp Yoghurt
  • 1tbsp Coriander Seeds
  • 2tsp Tumeric
  • Dressing:
  • Fresh Coriander small bunch
  • 4tbsp Yoghurt
  • 1 Lemon zest and juice
  • 1tbsp O Oil
  • 1tsp Mustard


  1. Blitz marinade ingredients and marinate chicken for at least 30mins
  2. Dry fry coriander seeds in a hot frying pan until the aroma of them becomes stronger
  3. Blitz together all dressing ingredients
  4. Dry grill the pittas to give them a smokey taste and charred look
  5. Thread chicken onto metal skewers and grill on a medium to high heat 5mins each side
  6. Stuff pittas with chicken pieces and salady bits (salad leaves, cucumber slices, red onions, tomatoes whatever you like) and drizzle dressing inside the pitta over its filling!
