Chilled Cucumber Soup

This soup is great for summers. It’s just a matter of blitzing and then leaving overnight so a great way to give you more time when preparing for a dinner party!

Chilled Cucumber Soup

  • Servings: 4-6

  • 2 Cucumbers Peeled
  • 2 Garlic Cloves
  • Fresh Mint small handful
  • 2tbsp Fresh Tarragon small handful
  • 2tbsp Fresh Dill
  • 2tbsp Fresh Parsley
  • 1 Shallot
  • 1 Lemon juiced
  • 150ml Sour Cream
  • 100ml Yoghurt


  1. Blitz all ingredients till smooth, season well and refrigerate overnight. Serve chilled with fresh focaccia!
