Spicy Pork Satay

This recipe is great as a starter or a canapé. Serve with a delicious Spicy Peanut Sauce!

Spicy Pork Satay

Ingredients

  • 500g Pork Fillet diced into bitesize pieces
  • 3 Garlic Cloves
  • 2 Lemon Grass Stalks
  • 1 Onion
  • 2tsp Tumeric
  • 2tsp Cumin Seeds
  • 2tsp Fennel Seeds
  • 2tsp Coriander Seeds
  • Lime 1 juiced
  • 1tbsp Sunflower Oil

Directions

  1. Heat a frying pan and dry fry the whole spices together until they become fragrant
  2. Smack the ends of the Lemon Grass to release flavour
  3. Combine all the ingredients below ‘pork fillet’ and blitz
  4. Put pork in a dish and pour over marinade. Use gloves and mix making sure the pork is thoroughly coated
  5. Marinate the pork overnight
  6. Thread the pork onto skewers
  7. Heat a griddle pan and grill 3mins each side
  8. Serve with Spicy Peanut Sauce
