Seriously Veggie Lasagna

Our crew is made up of mainly boys who absolutely love their meat… This recipe however is one they love and is the perfect answer to a meat free and low carb delicious Lasagna. It’s healthy, filling and full of flavour!

Seriously Veggie Lasagna

Ingredients

  • 3 Garlic sliced
  • 2 Onions sliced
  • 1 Red Pepper sliced
  • 1 Yellow Pepper sliced
  • 1 Courgette diced
  • 1 Green Chilli diced
  • 1 tin of Sweetcorn
  • 1/2 Broccoli broken into florets
  • 3tsp Mixed Herbs
  • 250ml Béchamel Sauce
  • 500ml Passata
  • Mozzarella
  • Edam

Directions

  1. Heat your oven 180℃
  2. Slice your aubergine into 1cm thick slices, sprinkle with salt and leave to drain in a colander.
  3. Roast all your remaining veggies in a little o oil with seasoning and the dried mixed herbs (1hr or so)
  4. Once your veggies are roasted maybe even a little charred, bring them out the oven
  5. Pour Passata over the roast veggies and mix well
  6. Remove aubergines from colander and pat dry with kitchen towel
  7. Assemble your veggie lasagna in an oven proof dish
  8. Layer of Aubergine
  9. Spoon over tomato mix
  10. 10.Layer of cheeses
  11. Spoon over bechamel and grate extra nutmeg on top
  12. Repeat until the dish is filled and add some extra cheese on top
  13. Whack veggie lasagna in the oven for 30-40mins
  14. Place under the grill for a few mins towards the end to crisp up your top lay of cheese!!! YUM!!!
