Left Over Lamb Curry

Having had a delicious roast lamb the night before, turn your left overs into the most insane Lamb Curry just by adding a few ingredients and leaving it on a slow simmer!

Left Over Lamb Curry

  • Left Over Lamb shredded(roughly 500g)
  • 1 Large Onion chopped
  • 2 Red or Yellow Peppers chopped
  • 1tbsp Curry Powder chopped
  • 3tsp Cumin
  • 1tbsp Grama Masala
  • 1x Tinned Toms
  • 1x Tom Puree
  • Lamb Stock (roughly 200ml)


  1. Fry off your onions and peppers until softened
  2. Chuck the spices and stir well
  3. Mix in tom puree (add a little water to help deglaze the pan if the ingredients are sticking)
  4. Throw in leftover lamb, tinned toms and just enough stock to cover the ingredients
  5. Bring to a boil and then turn down to a simmer
  6. Place a lid on and allow the lamb and veg to stew for around 1hr to get great flavours… when ready… serve with some fluffy rice or warm nanns!
