Veggie Noodle Soup

Use any veg you’ve got even throw in some chicken if you like! A really yummy and refreshing soup full of goodness!

Veggie Noodle Soup

  • 1tbsp Coconut Oil
  • 3 Garlic Cloves Sliced
  • 2 Chillies
  • 3 Star Anise
  • Thumb of Ginger Grated
  • 2tsp Yellow Curry Paste
  • Veggies Galor- Peppers/ Bean Sprouts/ Broccoli/ Peas/ Sweetcorn
  • 1 tin of Coconut Milk
  • 2 pints Chicken or Veggie Stock
  • 3 nests of Egg Noodles
  • 1 bunch Coriander Roughly Chopped
  • 2 Red Chillies Sliced
  • 2 Limes Cut into Wedges
  • 1 Bunch of Spring Onions Sliced


  1. Heat a large frying pan over high heat, add your coconut oil and fry off the garlic, chilli, star anise and ginger until they become fragrant
  2. Add curry paste and fry for a minute or so
  3. Chuck all your veg in the pan and continue to fry on high heat for a couple of minutes
  4. Once everything’s been fried off, pour in the coconut milk and stock
  5. Bring to a boil and throw in egg noodles
  6. Once egg noodles are cooked (a couple of mins) add chopped coriander (stalks and all), some freshly sliced chillies, lime wedges and sliced spring onions
  7. Take the soup off the heat, ladle the mix into bowls and serve!
